Egg and Feta Muffin Cases

Egg and feta cases are the perfect protein-packed ‘grab & go’ lunch or snack. With only 3g net carbs per serve, they’re a great option if you’re following a low carb approach. This vegetarian option includes creamy feta cheese, juicy Roma tomatoes, and fresh spinach, but feel free to experiment with your own fillings like ham, mushrooms and cheddar cheese, or smoked salmon, chives, and ricotta.

Instructions

  1. Preheat - Preheat oven to 200C/390F.
  2. Mix eggs - Whisk eggs in a large mixing bowl.
  3. Add ingredients - Add the feta, spinach, salt, and pepper and mix well.
  4. Pour into tray - Pour mixture into greased muffin tray or silicone molds.
  5. Bake - Place in oven for 15 mins until fluffy and golden.
  6. Serve - Serve immediately as a snack or enjoy with a fat-fueled salad for lunch.
