Egg and Feta Muffin Cases

Egg and feta cases are the perfect protein packed ‘grab & go’ lunch or snack. With only 3g net carbs per serve they’re a great option if you’re following a low carb approach. This vegetarian option includes creamy feta cheese, juicy Roma tomatoes and fresh spinach, but feel free to experiment with your own fillings like, ham, mushrooms and cheddar cheese or smoked salmon, chives and ricotta.

Cooking Instructions

Preheat oven to 200C/390F.

Whisk eggs in a large mixing bowl.

Add the feta, spinach, salt and pepper and mix well.

Pour mixture into greased muffin tray or silicone molds.

Place in oven for 15 mins until fluffy and golden.

Serve immediately as a snack or enjoy with a fat-fuelled salad for lunch.
